Quinoa Stir Fry

1 cup of Quinoa (cooked)

1 lb of Chicken fillet

½ cup of leek

1 ½ carrots

1 ½ cup of cauliflower

1 cup of green beans

2 Tbsp of olive oil

1 garlic clove

1teaspoon of sugar

Salt and pepper to taste

Greek feta cheese to garnish


Add one cup of quinoa and two cups of water in a pan in a high heat. Bring it to boil and lower to simmer for about 15 min or until quinoa is cooked. Set it as side.

In a skillet add 1 tbsp of olive oil and the sugar in a medium heat. Once sugar turns into a brown color add the chicken, garlic, salt and pepper .Stir for about 5-7 min or until chicken is ready. Set chicken aside. In the same skillet add 1 Tsp of olive oil and the veggies, salt and pepper to taste. Cook for about 5-10 min or until veggies are cooked (if you like your veggies well cooked add ½ cup of water while cooking).Once veggies are done, add the cooked chicken and quinoa. Mix it all together. Use feta cheese to garnish and for extra flavor
